Recipe for Parshas Netzavim by Esti Lebovic

This week’s Parsha discusses Moshe’s speech to Bnai Yisrael before he dies. I made a cinnamon and sugar mixture to represent the midbar, and I put a little Moshe doll on top of the “mountain” (blueberry cupcake).

2.5 Cups of flour

2.5 tsps Baking Powder

1 Tsp salt

1 ¼ Cup Sugar

2/3 Cup Margerine (softened)

1 Tsp vanilla extract

1 cup non-dairy creamer

2 eggs

1 pint of blueberries

1 Tablespoon of flour

Preheat oven to 375.

In a large mixing bowl, combine flour, baking powder, salt, sugar, margarine, vanilla, non dairy cream and eggs. Mix well. Rinse blueberries and dust with flour. Mix the berries in the batter. Line cupcake pan with paper liners, and fill it ½ to 2/3rds full. Bake for 25 to 30 minutes and cool.

Glaze (Dribble on cupcakes)

½ cup + 3 Tablepoons sugar

½ cup cocoa

½ cup non dairy creamer (I substituted water)

¼ cup margarine

1 Tsp instant coffee

Combine all ingredients in a pan. Heat over low heat, stirring often until smooth and slightly thickened. (About 5 minutes). Let cool. Sprinkle cinnamon and sugar on top of the cupcake. Enjoy!
