In honor of our deeply exciting upcoming festival of Shavuos, Mrs. Nechama Laber would like to present…  A delightful cheesecake recipe– the Laber’s Family Favorite!

Ingredients:

Cheese Cake Crust:

9 ground graham crackers (you can put them in a ziplock bag & use a rolling pin to crush)
2 tbs. brown sugar
¼ cup margarine (half a stick)
(Or use ready-made graham pie-crusts)

Cheese Cake (Filling):

1 lb. cottage cheese
½ lb. sour cream
1 cup sugar
3 eggs & 1 egg white
1 tsp. vanilla
1 tsp. lemon
1/3 cup flour

1.)  Melt margarine in microwave or pot on stove, while in a separate bowl, combine crushed graham crackers and brown sugar.  Pour in melted margarine, and combine well, until moist.  Press into pie-plate, spring form, or appropriate pan.

2.)  Combine all filling ingredients in a large bowl by hand, or employ the use of a stand-mixer, until evenly mixed and for the most part silky (you needn’t mind the small pieces of cottage cheese, they’ll melt and be delicious).  It may help to beat eggs before adding to combination.

3.)  Pour cheese mixture into crust, and bake on 350 for 40 minutes or until set.
