Don’t be intimidated by the name – this is an easy one-bowl cake recipe
It tastes delicious and will make you look like a pro.

Ingredients

Spray oil containing flour for greasing and flouring pans

4 large eggs

2 cups sugar

1 cup oil

2 ½ cups flour

¾ cups soy milk or rice milk

2 teaspoons baking powder

Dash of salt (sea salt)

1 teaspoon vanilla extract

 

Directions

1 Preheat the oven to 350.  Spray two 10-inch round pans.
2 In a large bowl, whisk together all the ingredients.
3 Pour into the prepared pans
4 Bake for 25 to 30 minutes, or until a toothpick comes out clean.
Let it cool in the pan for 10 minutes, and then carefully turn it over on a rack to cool completely.

Optional

You can repeat the recipe, which will give you four layers in all for a taller cake.

 

Frosting

Ingredients

3¾ cups confectioners’ sugar

½ cup margarine, softened

3-4 tablespoons soy milk or rice milk

1 teaspoons vanilla extract

Food coloring – optional

 

Directions

1 Combine ingredients in a large bowl, with a mixer at low speed till creamy.

2 If you like, you can add more soy milk or rice milk to make it easier to spread.

3 If you choose to make the four layer cake – double the frosting recipe.

Let your imagination be your guide – you can add colors (food coloring) and flavors (flavored extract) as you wish.

 

Cake Assembly

1 Once the cakes are completely cool, place the first layer on a cardboard cake circle.
2 Using a spatula, gently spread the frosting on the first layer.
3 Place the second layer on top of the first layer. If you choose to do more layers, repeat steps 2 and 3
4 Frost the sides and top.
5 Fill a pastry bag with the remaining frosting, and decorate!

Tip- If you don’t have a pastry bag,  a Ziploc bag, with a small cut at the corner, will do the trick.
