These cookies are great for a dessert or a snack, they are best straight out of the oven.
If you are a fan of chocolate and peanut butter, these cookies are just for you!
Adapted from Overtime Cook- Oatmeal Peanut Butter Chocolate Chip Cookies {Without Butter or Margarine}
Ingredients:
  • ¾ cup oil
  • ½ cup creamy peanut butter
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 eggs
  • 2 cups flour
  • 1 cup oats
  • ¾ cup chocolate chips
Instructions:
  1. Preheat oven to 375. Line a cookie sheet with parchment paper and set aside.
  2. In the bowl of an electric mixer, beat together the oil and peanut butter until smooth, about a minute. Add the sugars and beat until creamy.
  3. Add the vanilla extract, baking soda and eggs, beating to combine after each addition.
  4. Add the flour and oatmeal and beat until just combined.
  5. Add the chocolate chips and stir to combine.
  6. Place in refrigerator for 30-60 minutes.
  7. Scoop the dough onto the prepared cookie sheet using a medium cookie scoop or your hands.
  8. Bake at 375 for 9 minutes.

Makes about 3 Dozen cookies
