These cookies are great for a dessert or a snack, they are best straight out of the oven.
If you are a fan of chocolate and peanut butter, these cookies are just for you!
Adapted from Overtime Cook- Oatmeal Peanut Butter Chocolate Chip Cookies {Without Butter or Margarine}
Ingredients:
- ¾ cup oil
- ½ cup creamy peanut butter
- 1 cup brown sugar
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 2 eggs
- 2 cups flour
- 1 cup oats
- ¾ cup chocolate chips
Instructions:
- Preheat oven to 375. Line a cookie sheet with parchment paper and set aside.
- In the bowl of an electric mixer, beat together the oil and peanut butter until smooth, about a minute. Add the sugars and beat until creamy.
- Add the vanilla extract, baking soda and eggs, beating to combine after each addition.
- Add the flour and oatmeal and beat until just combined.
- Add the chocolate chips and stir to combine.
- Place in refrigerator for 30-60 minutes.
- Scoop the dough onto the prepared cookie sheet using a medium cookie scoop or your hands.
- Bake at 375 for 9 minutes.
Makes about 3 Dozen cookies
