Marshmallows are so yummy! Chocolate is even better, and when you put both of them together and it gives both a new taste!

Here is a step-by-step guide how to make marshmallow chocolate chip cookies!

 

Ingredients

1 cup flour

1/4 cup unsweetened cocoa powder

1 tsp. baking powder

1/4 tsp. salt

4 tbs. margarine, at room temperature

1/2 cup+ 2 tbs. of sugar

1 egg

2 tbs.+1 tsp. soy milk

1/2 tsp. vanilla extract

34 mini marshmallows or 17 marshmallows sliced in half

 

Ingredients for the Frosting

2 1/4 confectioners sugar

4 1/2 margarine at room temperture

1/4 cup unsweetened cocoa powder

1/4 cup hot water

3/4 tsp. vanilla

 

Step-by-Step Instructions 

1. In medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside

2. Using an electric mixer, cream together the margarine and sugar until it is light and fluffy; it takes about 3 minutes.

3. Add the egg and beat till combined.

4. Add the vanilla, beat till combined, then scrape down the sides of the bowl.

5. Reduce speed to low and add the flour mixture in to the bowl alternating with the soy milk.

6. Refrigerate the dough for an hour.

7. Preheat the oven to 350 degrees F. Line the cookie sheets with parchment paper.

8. Scoop out 2 tsp. of dough at a time (I used a small cookie scooper)

9. Bake until the edges appear dry for 8-10 minutes, rotating sheets halfway through the baking time.

10. Remove the cookies from the oven and press a marshmallow into the center of each cookie.

11. Return to the oven for 2 more minutes.

12. Make the frosting by combining all the ingredients in a medium bowl.

13. Apply the forsting on the cookies. Top it with sprinkles if you wish. Let it sit for 30 minutes before serving
