by Ariel Ezra, age 11, from NJ
The sweet and spicy flavors mix to create this fresh, tangy, salsa!
Ingredients:
SALSA:
- 6 strawberries
- 1/2 mango
- 1 large tomato
- 1 green pepper
- 1 red pepper
- 2 kiwis
- 2 jalapeños
- 1/2 onion
- a half of a handful of cilantro
- fresh lime juice
- olive oil
- salt
- ground black pepper
GRILLED CHICKEN BREAST:
- 8 pieces of chicken breast
- olive oil
- salt
- ground black pepper
Tips:
-Put on gloves while cutting the jalapeños. If you touch your eyes, or mouth, after cutting a jalapeño, you will feel a sting.
-Wash your hands thoroughly after cutting the jalapeño.
-Salsa also goes well with tortilla chips.
Directions:
1. Dice the tomato, red pepper, green pepper, kiwis, strawberries, peach, mango, jalapeños, onion, and cilantro, them pour all of the diced vegetables into a large bowl. Squeeze a fresh lime onto the salsa, and drizzle olive oil to your taste. Shake salt and ground black pepper onto the salsa to your taste. Mix well. (Optional: let salsa sit in fridge for about 12 hours so flavors can marinate.)
2. Smother chicken breast in olive oil so the chicken is totally covered in a thin layer of olive oil. Shake salt and pepper on it, also to your taste.
3. Grill the chicken until fully cooked, and serve with salsa on top!
