These cinnamon rolls are so fluffy and soft. They are especially delicious warm and fresh out of the oven. There’s nothing better than eating warm cinnamon rolls! These are so easy and so worth it! They are perfect for breakfast, a dessert or a snack.

Makes about 20 cinnamon rolls:
INGREDIENTS:
For the Dough:
1 package of yeast
1/2 cup warm water
1/2 cup warm soy milk
1/4 cup sugar
1/3 cup unsalted margarine, melted
1 large egg
3 to 3 1/2 cups all-purpose flour
For the Filling:
3 tbs margarine, softened
1/2 cup brown sugar
1 1/2 Tablespoons ground cinnamon
For the Glaze:
1 1/2 cups powdered sugar
3-4 Tablespoons soy milk
DIRECTIONS:
For the Dough:
In a small bowl, dissolve yeast in warm water and set aside.
In a large bowl, or the bowl of your stand mixer, mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Pour in the yeast mixture. Mix in remaining flour, 1/4 cup at a time, until dough is easy to handle. If mixture appears too dry, add 1 tsp. water at a time, mixing well after each addition.
Knead dough in your mixer, or by hand on lightly floured surface, for 5 to 10 minutes. Place in a well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.
Once doubled in size, punch down dough. Roll out on a floured surface into a big rectangle.
For the Filling and Baking:
Spread the softened margarine, then pour the cinnamon and brown sugar all over dough. Beginning at the longest side, roll up dough and pinch edges together to seal. Cut into slices.
Coat a baking pan with nonstick cooking spray. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 30-45 minutes.
When ready to bake, preheat oven to 350 degrees F. Bake for 20-25 minutes, or until golden brown.
For the Glaze:
Mix powdered sugar, whisk in soy milk 1 tablespoon at a time until the glaze reaches desired consistency. (If you like a thinner consistency glaze, add more soy milk.) Drizzle over slightly cooled rolls.
